Great Ways to Makeover Thanksgiving Leftovers

Yesterday I promised to share with you how I plan to use up and makeover my Thanksgiving leftovers. Don’t get me wrong, I love to have Thanksgiving leftovers the next day.  But, sometimes it gets old and boring to eat the same thing over and over for a few days.  Of course, we’ll have the standard turkey sandwiches. Who can have Thanksgiving leftovers and not make a turkey sandwich? This year I’m reinventing our Thanksgiving leftovers in a few other ways.

One way I plan to use up some of that delicious turkey is in buffalo turkey taquitos.  I found the recipe when I was looking on Pinterest just for easy food ideas that I could prepare in advance and freeze for later use.  The recipe I found actually calls for chicken but I thought this would be a great recipe for turkey to be swapped in.  I’ve made the chicken version before and my family loved them.  They are actually a little milder than the name suggest, so if you like your food spicy add a touch more of the buffalo sauce.

I also plan to make an oh so yummy Thanksgiving Leftover Shepard’s Pie.  It’s really easy and you can add whatever leftovers you have to your dish.  It might be fun to make them in individual crocks and let everyone put whatever ingredients they want inside. I can see some with veggies some without, and some with light meat and others with dark meat. No matter how they’re made I’m sure they will be tasty.
