Menu Plan Monday

I’m going to be posting my weekly menu plans for the week over at I’m and Organizing Junkie each week. You can click the picture above to see her menu plan for the week and many others too.

Turkey, turkey, we ate lots of turkey last week.  I promise this week we won’t be having any turkey at all. This week I’ll be making a few of my own recipes and some that I’ve found online.

Monday - Tasty Lentil Tacos - even my meat-eating husband loves these.  We like to serve them in both flour and corn tortillas.  I have to admit that I add quite a bit more broth to the recipe in order to help cook the lentil.  2 full regular sized cans is usually what I end up using.  I don’t add all of it at once though, I let it simmer and continue adding more over time.

I e-mailed the recipe to myself and took a screen shot to share with you. The recipe has 692 ratings and 4.5/5 stars.  The one listed above only has 9 ratings.  Very strange.

TuesdayBuffalo Chicken Pasta – I made this recipe up one day when I looking through my cupboard trying to figure out what to make for dinner.  (Recipe will be posted in a follow-up piece.)

WednesdayBaked Potato Bar – We like to have sour cream, chives, sharp cheddar cheese, butter, bacon, chili, and usually whatever is lying around in the fridge that needs to be used up.

Thursday – Leftovers - Time to eat up all of the leftovers that have accumulated over the past few days.

FridayBroccoli & Beef Stir Fry – This is a simple, quick and easy meal.  I’m still working on getting my 4-year-old daughter to eat the broccoli though.  My 1-year-old loves broccoli so it’s a big hit for her.

Saturday - Bacon Tomato Bagel Melts – we haven’t tried this recipe yet but it’s bacon and tomato… I’m sure we’ll love it.

SundaySpicy Meatloaf with Mashed Potatoes and Fried Okra – My sister makes a great meatloaf.  I detest meatloaf but this is YUMMY!!!  I like to take the recipe and divide the meatloaf up into mini meatballs and cook them in my mini muffin tin.  It makes serving and portion size very easy to control. It also makes storing leftovers really simple because you can just pop out however many meatballs you need and reheat. (Recipe will be posted in a follow-up piece.)

I’ll be posting my buffalo chicken pasta and my sister’s spicy meatloaf recipes later this week.  So make sure to come back for these tasty recipes. What’s on the menu at your house this week?  I’d love to get new ideas that are family friendly, especially for picky eaters and little kids.

    Love the mini meatloafs! Hubby isn’t a big meatloaf fan either, mostly because it usually leaves so much in leftovers. This may work perfect for him :)

      Making the meatloaf meatballs really makes a world of a difference. I still love the regular way because I do like a good meatloaf sandwich but the meatballs just make life easier. Oh…. you know what, I never thought to try and make a meatball sub with these meatloaf meatballs. I bet that would be FANTASTIC. I hope that tip works for your family.

      Comfort food has been on the menu because the weather is getting cooler, and well we love it. That, and my husband and I both are coming down with a cold. Maybe I should swap in a soup one night.
