Menu Plan Monday – Dec. 10/12

Menu Plan Monday Winter Button

Monday: Mini Spinach and Mushroom Quiche (carry over from last week because we went out for Mexican food on Sunday night)

Tuesday: Crispy Fish Tacos – I make a yummy white sauce for these.  It’s 1 part plain yogurt to 1 part mayonnaise. It’s super simple and delicious.  It tastes just like the kind I used to get at Rubio’s Baja Grill when I lived in California.  I really miss eating there so I try to recreate those meals often.  I like to eat them on corn tortillas, but my husband prefers flour, so we always have both.

Wednesday: Cheesy Chicken Tater Tot Casserole in the crock pot – I found this recipe on orgjunkie.com  She had it listed on her menu a few weeks ago and mentioned how easy and yummy it was so I thought I would give it a try.  My daughter loves all of the ingredients in this I just have to convince her to eat them all together.  I hope it’s a winner because it looks soo simple and delicious.

Thursday: Leftovers

Friday: Spaghetti and Meatballs

Saturday: Parmesan Crusted Pork tenderloin, sweet potatoes, and broccoli – a few of my mommy friends were discussing having pork tenderloin for dinner last week and swapping recipes.  I had to add this to the menu for the week because it’s a big hit in my house. Sandwiches out of the leftovers are yummy too.

Sunday: Pizza – I’m thinking of making home-made pizza. Allie loves to help roll out the dough and put on the toppings.  Some times we even use cookie cutters and make different fun shapes.  I remember last year about this time we made snowman shaped pizzas.  This year her little sister is old enough to hep sprinkle on a few toppings.  I’m excited to see how she does with these.

To see more menu’s for the week drop by orgjunkie.com where I’ve shared my menu with others. What’s for dinner at your house this week?
