Last week’s menu was planned out great, however, life got in the way so I have a few carry over meals. I ended up making more than I thought so we had a lot of leftovers. Then also when I went shopping for ingredients for last week I didn’t find what I wanted.
One night instead of Parmesan crusted pork tenderloin we had teriyaki pork chops instead because there were not any good looking pork tenderloins left at the store. Also, I followed a few recipes online for those pork chops and let me tell you… I thought the cooking time suggested was insane. All of the recipes called for you to cook the pork chops for at least an hour or more in the oven. I thought that was a bit long so I set my timer to check on them at 30 minutes. I was right 1 hour was way too long. The recipes all called for just regular boneless pork chops, not monster sized 3 inch thick hunks of meat. So, unfortunately my pork chops came out rather dry. They tasted alright but were dry. My daughters didn’t seem to mind how dry they were, but my husband and I only ate half a pork chop each.
I was able to salvage the remaining pork chops the next day by turning them into teriyaki pork fried rice. I cut up the pork chops into small cubes and then added it to some brown rice, peas, and some scrambled eggs along with a bit of soy sauce and teriyaki sauce. It wasn’t bad actually. We ate that for dinner the next night which pushed another item from my menu back another night, hence the carry over items this week.
Monday: Cheesy Chicken Tator Tot casserole in the crock pot - I didn’t make this last week because the kids had leftover fish from fish tacos and wanted tater tots with it so I needed to get more tater tots and didn’t make it.
Tuesday: Homemade Pizza – We didn’t make this either. I bought stuff to make our own pizza dough, but I also bought English muffins. I guess it will depend on how we are feeling tomorrow on which method we choose for our crusts.
Wednesday: Lasagna – I’m being lazy with this one and going the frozen route.
Thursday: Leftovers – I’m sure we’ll have a bunch.
Friday: Beef and Bean Tostadas
Saturday: Chili – Not sure if we are still going to be home or if we will be gone on vacation to visit family for the holidays. If we’re still home this is what we’re having.
Sunday: Chili Mac – If we’re home we’ll use leftovers to make this yummy meal.
