Menu Plan Monday – Jan 7/13

I’m back to my regular routine of menu planning on time again this week. I look forward a much less stressful week with my meals already planned out in advance. This week is filled with a lot of new recipes for my family to try out. There isn’t anything wild or crazy that I don’t think they won’t like, it’s just food I haven’t made before. I’m excited to try these out and add some new staples to our meal rotation.

Monday: Taco Stuffed Shells – my sister, Heather, told me she made these for her family and they sound delicious. They sound similar to a buffalo chicken pasta I make with shells so I thought I’d give these a try this week.

Tuesday: Breakfast for Dinner Egg Muffins with Fresh Fruit – I’m planning to make little scrambled egg and cheese muffins. I’d like to add some sausage and veggies to them too. I know I’ll make a few extra plain ones with just cheese for my daughter to grab and go for breakfasts.

Wednesday: Chicken Parmesan with Spaghetti – this is one of my husband’s favorite meals. I’ve never made it myself so I’m giving it a shot.

Thursday: Leftovers

Friday: Fajitas – I have a big bag of bell peppers already cut up and ready to go in the freezer. This will be a really easy meal to toss together because all of the chopping is already done.

Saturday: Tuna Melts – I’ve enjoyed having a warm sandwich of some type for one of our weekend meals the past week or so. I might just make this a regular thing for our family because it doesn’t take much time and it hits the spot.

Sunday: Grilled Cheeseburger Wraps –  I haven’t used my George Foreman grill in forever. We love to eat grilled and stuffed burritos so I thought why not give these tasty wraps a try and to grill them on the George Foreman grill.
