Okay so I know this is not Monday, but I did have it done I have just been sick and have not posted it until tonight. I thought I was getting better but it is still lingering in all of us. As a result, again my menu from last week was not followed completely because we didn’t feel well, and we had leftovers an extra night.
Wednesday: Quinoa Stuffed Bell Peppers – I found these the other day and had to try them out. I’ll write a review on them for you soon. I would say tomorrow, but I’m still not 100% and don’t want to get your hopes up.
Thursday: Bowtie Pasta with Roasted Red Peppers
Saturday: Lentil tacos
Sunday: I had planned a Sushi Making class with my husband because we forgot to call and make reservations so we moved it to this week. Unfortunately, this weekend is Superbowl Sunday and we don’t have child care for this now so this is out the door again. I’m thinking we’ll make breakfast for dinner so I can replenish my supply of waffles for the freezer. So, Waffles, scrambled eggs and bacon it is, or maybe just scrambled eggs and bacon since I’m going to be making a bunch of oatmeal to go bars this week.
