Whoops, I forgot to publish this yesterday so here is my menu for the week even though it’s a day late. I’m really enjoying my menu planning. I’m noticing that I’m venturing out and trying new recipes and we haven’t been stuck in a rut eating the same thing week after week.
Monday: Chicken Satay, Peanut Sauce with Couscous and Broccoli – The kids really loved eating these last night. it was a big hit and not difficult to make at all. This will definitely be on the menu again.
Tuesday: Slow Cooker Carnitas Tacos – I’ve never made carnitas at home. I’m excited to use my slow cooker and have some yummy Mexican food with little to no effort.
Wednesday: Pulled Pork Sandwiches on Sweet Hawaiian Rolls – I’ll be using the left over carnitas, or reserving a portion of the pork before crisping it up, for this meal.
Thursday: Pasta with Creamy Vodka Sauce
Saturday: Roast Beef and Chicken Paninis
Sunday: Tilapia with Couscous and Broccoli – We’ve been really wanting fish around here and so I thought we’d have some Sunday. I’m not quite sure how I’ll be cooking it yet. IF you have any recipes that you like with tilapia or similar fish I’d love to hear your ideas.
