Over the past year and a half I’ve had a few major changes in my life, including losing about 50 pounds. I’m now living a healthier and active lifestyle and you’ll definitely see that reflected in my menu plans. I’ll be posting mostly clean eating food as that is mostly what we eat now. However, I’m not overly strict and like to follow an 80%/20% rule to allow myself whatever it is I would like to eat. It’s all about balance really.
The weather lately has been really cold here so I thought it would be the perfect time to try out some new slow cooker soup recipes. I’m really excited to try the Slow Cooker Quinoa-Chicken Kale Soup that I have planned for Monday.
Monday: Slow Cooker Quinoa-Chicken Kale Soup
Tuesday: Salmon, Broccoli and Sweet Potatoes
Thursday: Spaghetti Squash with Turkey and Spinach Meatballs
Friday: Chicken Fajita Bowls
Saturday: Shrimp, Veggies and Whole Wheat Pasta, tossed with a Tuscan Vinegrette
Sunday: Potluck – I’m bringing a Fruit Salad with a Honey Lime Dressing.
