This week for the menu plan I’m breaking out some old recipes and making them a bit healthier. I’m also giving some recipes that I’ve tried in the past a second chance to see if they will stick around in rotation.
Monday: Buffalo Chicken Pasta – I’m going to make this with veggie pasta to make it a bit healthier. Also, instead of sour cream now I use plain Greek Yogurt. Fage is the only brand of Greek yogurt I’ll buy… it’s the best!
Tuesday: Fish Tacos – Always a hit in our house. I make a yummy white sauce with plain yogurt and mayonnaise to go on top. They are mm mm good!
Wednesday: Breakfast for Dinner – Egg white Oatmeal Pancakes These are healthy and filled with lots of protein. I feel great about feeding them to my family because it’s not just a big plate of carbs. (I’ll share my recipe later this week.)
Thursday: Quinoa Stuffed Bell Peppers – I made the stuffed peppers in the past but they weren’t my favorite because I think I added almost twice the amount of veggies it called for so it got kind of watery. Hopefully, if I am not so generous with the veggies and have a better ratio of veggies to quinoa they will turn out great.
Friday: 5 Ingredient White Chicken Chili – This is soo simple and can be done in about 15 minutes. It’s perfect for when you are running late or have a busy day and want something warm and filling but simple on the table fast.
Saturday: Leftovers – We always have at least one day every week to just kick back and relax and enjoy the food that we’ve had leftover from the previous days. In my house I have a 3 day rule – if it’s not gone in 3 days it’s tossed.
Sunday: Bible Study Home Fellowship Potluck – I don’t have food duty this week, but I will do my best to make healthy choices. If for some reason I need to I can always eat when I get home. My fridge usually is stocked with items for a salad at all times.
