I’m a HUGE CARB-aholic and last year I discovered oatmeal egg white pancakes. Oh My Goodness they satisfy that craving WONDERFULLY!!!! I feel great about feeding these to my girls because they aren’t just eating a big plate of carbs. Here’s my recipe:
Oatmeal Egg White Pancakes
1/2 cup egg whites
1/2 cup quick oatmeal (the finer ground stuff)
pinch of baking soda
1/4 – 1/2 tsp of vanilla extract
1/3 – 1/2 of a banana
1/4 tsp cinnamon or more to taste
1/2 tsp Stevia (optional)
dash of salt
1. Mix the egg whites until really fluffy soft peaks.
2. Mix dry ingredients in another bowl.
3. Mash banana and add vanilla.
4. Add the banana mixture to the dry ingredients and mix well.
5. Stir in 1/2 of the egg whites and mix thoroughly, then fold in the rest.
6. Use a 1/4 cup scoop for each pancake and cook on medium high heat.
This batch makes about 8 pancakes. YUM!!!
If bananas aren’t your thing try swapping out the banana for unsweetened applesauce. They are just as tasty and we love them too. I really go back and forth based upon what I happen to have available. If you don’t happen to have quick oats you can use old fashioned and just pulse them in a blender or food processor a few times. it breaks the oats down to about the same size as quick oats. Just be sure not to turn it into oat flour. We did that once and weren’t terrible excited about the different texture of the finished pancakes.
Whenever I make these pancakes I always make a triple batch so we can have extra throughout the week. They reheat beautifully. They are especially great when we might be running behind but I still want to feed us a healthy and filling breakfast. These pancakes are even super portable. I just heat a few up and wrap them in a paper towel and eat them on the go!
